A Mighty Panettone

I had the opportunity to document the laborious baking process of Mighty Bread’s holiday panettone. This traditional Italian dough is like no other, chock-full of dried fruits and chocolate. It requires days to prove and the baked cake cools upside down to remain airy and fluffy.
